WHY THIS BEEF

Slide 1 of 4

01 / 04
  1. Aerial view of golden pasture divided into paddocks by fence linesThe land

    160 acres, 2,500 ft

Oak savanna in the Sierra foothills outside Grass Valley, divided into five paddocks the herd moves through every few days.

  2. Black Angus steer at golden hourThe herd

    Born and finished here

A closed Black Angus herd on pasture, our own hay, and alfalfa. Never grain, never a feedlot pen. A full year slower, on purpose.

  3. A rancher fastening the chain latch on a pasture gateThe work

    Moved, rested, repeated

The whole method in three words. Do it for years and the land improves instead of wearing out. The beef is the proof.

  4. Dry-aged ribeye with deep marblingThe cuts

    Dry-aged 21 days

USDA-inspected, fabricated into steaks, roasts, and ground, vacuum packaged and labeled by cut for your freezer.

How the estimate is built

Every estimate uses a 650lb average hanging weight. Beef is priced per pound at your share's rate. Cut-and-wrap (about $1,200 per whole animal) and harvest/kill (about $225) are prorated to your share and passed through at cost with no markup. Processor rates may change before harvest.
